Masala Puri (Street Style) / ಮಸಾಲಾ ಪೂರಿ (ಗಾಡಿ ಸ್ಟೈಲ್)

Chat Puris served with Green Peas gravy, chopped Vegetables and Sev



Ingredients for Gravy:

1 cup Green Peas or 2 cups frozen(soaked) Green Peas  /  1 ಕಪ್ ಒಣ ಬಟಾಣಿ ಅಥವಾ 2 ಕಪ್ ಹಸಿ(ನೆನೆಸಿದ) ಬಟಾಣಿ
1/4 cup soaked Green Grams  /  1/4 ಕಪ್ ನೆನಿಸಿದ ಹೆಸರು ಕಾಳು
2 Green Chillies  /  ಹಸಿಮೆಣಸು
4 - 5 strands of Coriander leaves  /  ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು 
3 - 4 strands Mint leaves or 1 tsp Mint leaves powder  /  ಪುದಿನ ಸೊಪ್ಪು
4 - 5 Pepper  /  ಕಾಳು ಮೆಣಸು
2 - 3 Cloves  /  ಲವಂಗ
3/4 - 1 inch sized Cinnamon  /   ಚೆಕ್ಕೆ 
1 - 2 Bay leaf  /   ಚೆಕ್ಕೆ ಎಲೆ
Grape sized Tamarind  /  ಹುಣಸೆ ಹಣ್ಣು
Salt to taste  /  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು  
2 - 3 tsp Oil  /  ಎಣ್ಣೆ
10 - 12 Cumin seeds  /  ಜೀರಿಗೆ
1 medium sized Onion  /  ಈರುಳ್ಳಿ 
2 - 3 cloves Garlic  /  ಬೆಳ್ಳುಳ್ಳಿ 
Small piece of Ginger  /  ಶುಂಠಿ 
Pinch of Asafoetida powder  /  ಇಂಗು

Optional (ಬೇಕಿದ್ದರೆ ಮಾತ್ರ) Ingredients:
Chilly powder  /  ಮೆಣಸಿನ ಹುಡಿ
Roasted Cumin or Coriander seeds powder  /  ಹುರಿದ ಜೀರಿಗೆ ಅಥವಾ ಕೊತ್ತಂಬರಿ ಹುಡಿ
Chat Masala  /  ಚಾಟ್ ಮಸಾಲಾ
Corn or Rice or Wheat or All Purpose flour  (For Thickening) /  ಜೋಳ ಅಥವಾ ಅಕ್ಕಿ ಅಥವಾ ಗೋಧಿ ಅಥವಾ ಮೈದಾ ಹುಡಿ


Ingredients for Serving:
25 - 30 Chat Puris / ಚಾಟ್ ಪೂರಿ
1 cup cooked Green Peas  /  ಬೇಯಿಸಿದ ಬಟಾಣಿ 
1 Tomato  /  ಟೊಮೇಟೊ
1 Onion  /  ಈರುಳ್ಳಿ
6 - 8 strands of Coriander leaves  /  ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು
1 small Carrot  /  ಕ್ಯಾರಟ್
2 cups Sev (Bombay Mixture)  /  ಸೇಮೆ ಅಥವಾ ಬಾಂಬೆ ಮಿಕ್ಸ್ಚರ್  

Optional (ಬೇಕಿದ್ದರೆ ಮಾತ್ರ) Ingredients:
Chilly powder  /  ಮೆಣಸಿನ ಹುಡಿ
Chat Masala  /  ಚಾಟ್ ಮಸಾಲಾ
Lemon  /  ನಿಂಬೆ ಹುಳಿ 
Green (Mint, Coriander) Chutney / ಪುದಿನ, ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು ಹಸಿರು ಚಟ್ನಿ
Sweet (Dates, Tamarind) Chutney  /  ಖರ್ಜೂರ, ಹುಣಸೆ ಹಣ್ಣಿನ ಸಿಹಿ ಚಟ್ನಿ

Gravy Recipe:
Cook soaked green grams and soaked green peas together in a pressure cooker by adding salt and sufficient amount of water. (3-4 whistles)
Put cumin seeds, pepper, 1 bay leaf, cinnamon, cloves, asafoetida, 2 tsp oil in a pan and heat. After 1 min, add ginger garlic paste and fry them for about 1-2 mins. Add chopped onion and fry them for about 2 mins. Grind this fried onion masala, coriander leaves, mint leaves, green chillies, tamarind, cooked green peas, green gram mixture into smooth paste by adding sufficient amount of water. 

Pour this ground masala in a vessel. Add sufficient amount of water, salt and mix well. The consistency of the gravy should be like thin milkshake. (Adjust the optional ingredients if required. Keep the gravy in low flame for about 20-30 mins and keep stirring the gravy once in 5 mins. Take off the bay leaf from the gravy.
Masala Puri Recipe:
Cook soaked green peas by adding little amount of water and salt. (Can be cooked along with Masala gravy and can be kept aside)

Chop onion, tomato, coriander leaves into small pieces as shown in the picture below. Grate the carrot as shown in the picture below.

Take 6-7 Chat puris and mash them little bit as shown in the picture below.

Garnish little amount of cooked green peas as shown in the picture below.

Sprinkle little amount chat masala and chilly powder.(Add hot green chutney or sweet tamarind chutney if required)
Take around 1.5 cup of prepared gravy and pour it over the mashed puris as shown in the picture below.

Garnish with chopped tomato, onion, coriander leaves, grated carrot. Sprinkle little amount of bombay mixture / Sev as shown in the picture below. Garnish 2-3 drops of lemon juice(optional) and serve immediately. Above mentioned ingredients will serve 4-5 plates of Masala Puri.


Tips (ಸಲಹೆ):

 * Gravy can be prepared in advance but it should be hot while serving

 * Taste the gravy while boiling and adjust the optional ingredients according to your taste

 * Left over gravy can be stored in refrigerator or freezer

 * ಗ್ರೇವಿಯನ್ನು ಮೊದಲೇ ತಯಾರು ಮಾಡಿ ಇಡಬಹುದು ಆದರೆ ಸರ್ವ್ ಮಾಡುವಾಗ ಬಿಸಿ ಮಾಡಿಕೊಳ್ಳಿ

 * ಗ್ರೇವಿಯನ್ನು ಕುದಿಸುವಾಗ ರುಚಿ ನೋಡಿಕೊಂಡು ನಿಮಗೆ ಬೇಕಾದ ಪದಾರ್ಥಗಳನ್ನು ಹಾಕಿ

 * ಉಳಿದ ಗ್ರೇವಿಯನ್ನು ಫ್ರಿಡ್ಜ್ / ಫ್ರೀಜರ್ ನಲ್ಲಿ ಇಟ್ಟು, ಬೇಕಾದಾಗ ಉಪಯೋಗಿಸಿ


Pani Puri

Ingredients for Pani:
1 tsp roasted Cumin seed powder
1/2 tsp Coriander seed powder
1/4 tsp Pepper powder
Grape sized Tamarind
Small Grape sized Jaggary
Small piece of Ginger
10-15 Ajwain seeds / Oma
1 tsp Chat Masala / Chunky Chat
7-8 strands of Coriander leaves
1 Green Chilly
6-7 Mint leaves
Salt to taste

Ingredients for Garnishing:
1/4 Onion
4-5 strands of Coriander leaves
1/4 carrot
1/4 cup Masala Puri Gravy
1/4 cup soaked Green Peas / frozen Green Peas

Other Ingredients:
18 - 20 Chat Puris
1/4 cup Masala Puri Gravy

Recipe:

Grind all the pani ingredients except chat masala into smooth paste by adding little amount of water. Add sufficient amount of water and filter(around 1.5 cups of water). Add chat masala, salt, little amount of chopped coriander leaves and mix well. (Instead MDH Pani puri powder can be used to make pani.)

Cook green peas by adding little amount of water and salt. Chop onion, coriander leaves into small pieces. Grate the carrot.
Take 6 puffed Chat puris and poke a small hole in the center of each puri. Add 4-5 cooked green peas to each puri. Garnish each puri with little amount of chopped coriander leaves, onion and grated carrot as shown in the picture below.

Take little amount of gravy (Prepare the gravy as mentioned in Masala Puri recipe) and pour it to each puri. Dip it with pani and serve immediately.

Golgappa and Sukha Puri / ಗೋಲ್ಗಪ್ಪಾ ಮತ್ತು ಸೂಖ ಪೂರಿ

Chat Puri stuffed with boiled Potato Masala, served with spicy n tangy liquid and dry masala



Ingredients:
4 medium sized Potatoes  /  ಬಟಾಟೆ (ಆಲೂಗಡ್ಡೆ)
1/3 cup dry Black Chana or 1 cup soaked Chana  /  1/3 ಕಪ್ ಕಪ್ಪು ಕಡ್ಲೆ ಅಥವಾ 1 ಕಪ್ ನೆನಿಸಿದ ಕಡ್ಲೆ
5 - 8 strands of Coriander leaves  /  ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು
1/2 - 1 tsp Chilly powder  /  ಮೆಣಸಿನ ಹುಡಿ
1.5 - 2 tsp Chat Masala  /  ಚಾಟ್ ಮಸಾಲಾ
1/2 tsp roasted Cumin powder  /  ಹುರಿದ ಜೀರಿಗೆ ಹುಡಿ
1/2 tsp Mango (Amchoor) powder  /   ಮಾವಿನ (ಆಮಚೂರ್) ಪುಡಿ
Salt to taste  /  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು  
Lemon  /  ನಿಂಬೆ ಹುಳಿ 
Onion (Optional) / ಈರುಳ್ಳಿ (ಬೇಕಿದ್ದರೆ ಮಾತ್ರ)

Recipe (Golgappa):
Prepare the required Pani as mentioned in 3 Types of Pani for Pani recipe.
                            

Cook the soaked black channa, potatoes in a pressure cooker. (4-5 whistles) 

Once the pressure goes off, remove the outer cover of potatoes, mash it properly and keep it aside. 


Mash the 1/2 cup of cooked Chana and add.

Add Green Chutney, Cumin powder, Chilly powder, Chat Masala, Mango powder, chopped Coriander leaves, chopped Onion(optional), salt and mix well.


Take 7-8 puffed Chat puris and poke a small hole in the centre of each Puri. 

Fill each Puri with the prepared potato masala as shown in the picture below. 

Dip each puri in Pani and serve immediately.
 


Recipe (Sukka Puri):
Take 7-8 Chat Puris and poke a small hole in the centre of each Puri.

Fill each Puri with the prepared potato masala as shown in the picture below. 

Put 3-4 cooked Chana on each Puri as shown in the picture below. Add little amount of Green Chutney on each Puri as shown in the picture below.

Sprinkle little amount of Chilly powder, Chat Masala as shown in the picture below.

Sprinkle with some chopped coriander leaves and fresh lime juice. Serve immediately. 


Samosa Chat

Ingredients for Garnishing:
1/2 cup soaked Green Peas / frozen Green Peas / Batani
1/2 medium sized Tomato
1/2 medium sized Onion
4-5 strands of Coriander leaves
1/2 Carrot
Pinch of Chilly powder
Pinch of Salt
1/4 cup of Sev / Bombay Mixture
2-3 drops of Lemon Juice
Dates Tamarind Sweet Chutney (Optional)
Coriander Mint Leaves Chutney (Optional)

Other Ingredients:
4 - 5 cups Masala Puri Gravy

Gravy Recipe:
Prepare the gravy as mentioned in Masala Puri recipe.


Samosa Chat Recipe:
Cook green peas by adding little amount of water and salt.

Chop onion, tomato, coriander leaves into small pieces as shown in the picture below. Grate the carrot as shown in the picture below.

Take one Aloo Samosa and mash it as shown in the picture below.

Garnish little amount of cooked green peas as shown in the picture below. Sprinkle little amount salt and chilly powder as shown in the picture below.(Add hot green chutney or sweet tamarind chutney if required)

Take around 1 cup of prepared gravy and pour it over the mashed samosa as shown in the picture below.

Garnish with chopped tomato, onion, coriander leaves, grated carrot. Sprinkle little amount of bombay mixture / Sev as shown in the picture below. Garnish 2-3 drops of lemon juice and serve immediately. 

Crispy Chat Puri / ಚಾಟ್ ಪೂರಿ

Crispy deep fried Puris for different varieties of Chats



Ingredients:
2 cups Bombay Rava (Bansi Rava / Semolina)  /   ಸಣ್ಣ ಸಜ್ಜಿಗೆ (ಬಾಂಬೆ ರವಾ)
1.5 - 2 cups Corn flour  /  ಜೋಳದ ಹುಡಿ
1.5 - 2 cups Rice flour  /  ಅಕ್ಕಿ ಹುಡಿ 
1/3 tsp Turmeric powder  /  ಅರಶಿನ ಹುಡಿ
1/4 tsp Chilly powder  /  ಮೆಣಸಿನ ಹುಡಿ
Pinch of Asafeotida  /  ಚಿಟಿಕೆ ಇಂಗು
Salt to taste  /  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು  
Oil  /  ಎಣ್ಣೆ 

Recipe:
Put 4 cups water, salt, turmeric powder, chilly powder, asafoetida in a pan and heat. 

Once it boils add 1 cup of semolina and mix well. 

Once it boils, add the remaining 1 cup of semolina and mix them well.

Switch off the flame and add rice flour, corn flour and allow it to cool for about 20-30 mins.

Prepare a stiff dough by adjusting the ingredients(flour, oil/water) (While pressing the dough it should not form any cracks. If it cracks then it should be kneaded properly by adding little amount of oil/water) Prepare grape sized balls from the prepared dough as shown in the picture below.

Sprinkle little amount of oil on a plastic sheet and spread it over the sheet. Place the prepared balls on the plastic sheet. 

Pat them to thin round shape on the plastic sheet using another small plastic sheet and bowl as shown in the picture below.

This can also be prepared by rolling it like a chapatti, then take one small round shaped lid or bowl and press it over the rolled chapathi as shown in the picture below.

Take out the pressed puris carefully as shown in the picture below.

Keep oil in a thick bottommed vessel and heat it. Put the rolled / patted puris one by one to the hot oil. Fry both the sides of puri in medium flame until they are crisp.



Let them cool for around 30 mins and store them in an airtight container. 

This puris can be used for many chat items like Pani PuriMasala PuriGolgappa. 70-80 chat puris can be made from the above mentioned ingredients.


Tips (ಸಲಹೆ):

 * Since we cook the semolina, puri becomes crispy but it absorbs a little more oil. Hence place an extra tissue paper to absorb excess oil while storing
 * Keep the oil in high flame before frying the puris and then fry them in medium flame by turning them frequently

 * ಸಜ್ಜಿಗೆಯನ್ನು ಬೇಯಿಸುವುದರಿಂದ ಪೂರಿಯು ತುಂಬಾ ಮೃದುವಾಗಿ ಬರುತ್ತದೆ ಆದರೆ ಸ್ವಲ್ಪ ಎಣ್ಣೆ ಜಾಸ್ತಿ ಹೀರುವುದರಿಂದ ಡಬ್ಬದಲ್ಲಿ ತೆಗೆದಿಡುವಾಗ ಟಿಶ್ಯೂ ಪೇಪರ್ ನ್ನು ಹಾಕಿ 
 * ಪೂರಿಯನ್ನು ಎಣ್ಣೆಗೆ ಹಾಕುವಾಗ ಬೆಂಕಿಯು ದೊಡ್ಡದಾಗಿರಲಿ, ಆಮೇಲೆ ಮಧ್ಯಮ ಉರಿಯಲ್ಲಿ ಪೂರಿಯನ್ನು ಆಗಾಗ ತಿರುವುತ್ತಾ ಬೇಯಿಸಿ
