Zucchini Sambar

Ingredients:
1 medium sized Zucchini
1 large Onion
1 Drumstick
1 Tomato
1 cup soaked Yellow Lentils
2 cups soaked Green Peas
1 Green Chilly
1/2 tsp Turmeric powder
2 tsp Sambar powder
5 - 6 Coriander leaves
Grape sized Jaggery
Large Grape sized Tamarind
1/2 tsp Ginger Garlic paste
1 tsp Mustard seeds
1/2 tsp Cumin seeds
8 - 10 Fenugreek seeds
1 - 2 strands of Curry leaves
1 - 2 broken Red Chillies
Big pinch of Asafoetida
Salt to taste
3 - 4 tsp Oil

Recipe:

Chop the zucchini, drumstick, onion, green chilly into medium sized pieces as shown in the picture below.

Put the soaked green peas, yellow lentils, Tomato in a pressure cooker, add enough water, pinch of turmeric powder, salt and pressure cook(3-4 whistles). Once the pressure goes off, remove the outer skin of Tomato and mix them well.


Put mustard seeds, cumin seeds, broke red chillies, fenugreek seeds, oil in a pan/heavy bottomed vessel and heat. Once it starts spluttering, add ginger garlic paste and fry for few seconds until it turns light golden in colour. Add asafoetida, chopped onion, curry leaves, chopped drum sticks, turmeric powder, salt and saute them low/medium flame for about 1-2 mins.

Add chopped zucchini and mix them well.

Add sufficient water, sambar powder, tamarind water, salt, jaggery and cook them well by covering the lid. Keep stirring the sambar once in 2-3 mins.

Add cooked yellow lentils and green peas and bring to to boil by adjusting the ingredients and consistency. Add chopped coriander leaves and keep the sambar in low flame for about 2-3 mins.

Serve hot. It goes well with Rice/Dosa/Idli, etc.

Baby Corn Stir Fry

Ingredients:
10 -11 Baby Corns
1/2 tsp Pizza / Oregano Seasoning
Salt to taste
Pinch of Pepper powder(Optional)
2 - 3 tsp Oil

Recipe:
Wash the baby corns and keep them aside. 

Put oil in a thick bottomed vessel/pan and heat. Add baby corn and saute them in medium flame for about 3-4 mis.


Sprinkle little amount of salt, oregano seasoning, pepper powder and mix them well.

Keep this in low flame for about 1-2 mins and serve hot.

Zucchini Dose

Ingredients:
3 - 4 medium sized Zucchini
2 cups Rice flour
1/2 cup Bombay Rava
1 Tbs Gram flour / Kadle Hudi
1 tsp Sambar powder
1/2 - 1 tsp Chilly powder
1/2 tsp Turmeric powder
1 tsp Sugar
Button sized Asafoetida
2 - 3 tsp crushed dried Curry Leaves
1 tsp crushed dried Mint Leaves
2 tsp Dried Fenugreek leaves / Kasuri Methi
Salt to taste
Oil/Ghee

Recipe:


Add all the flours and dried ingredients in a vessel.

Add enough water and mix them well and prepare the batter as shown in the picture below. Don't make the batter too thin.

Cut the Zucchini into thin round pieces as shown in the picture below. Put them in salt water for about 5 mins and keep them aside.

Heat the Tava(Iron Tava preferred). Dip the zucchini pieces in the prepared batter and place it over the tava as shown in the picture below. Add 1 tsp of oil/ghee on top of dosa, cover it in a lid and cook it for a minute in medium flame.

Cook other side of the dosa as well for about 1-2 mins by covering the lid.

Serve hot along with any chutney/ sambar.  It also goes well along with chutney powders. The ingredients mentioned above will serve around 6-7 Zucchini Dosas.
