Masala Puri

Ingredients for Gravy:
2 cups of soaked Green Peas / frozen Green Peas / Batani
1/4 cup soaked Green Grams / Hesaru Kaalu
2 Green Chillies
4-5 strands of Coriander leaves
2-3 Mint leaves / 0.5 tsp Mint leaves powder
4-5 Pepper
2 Cloves
1 inch sized Cinnamon
1 Bay leaf
Grape sized Tamarind
Salt to taste
1/4 tsp Coriander powder
1 tsp Corn flour
3/4 tsp Rice flour
3/4 tsp Wheat flour
1-2 tsp Oil
1/4 tsp Mustard seeds
1/4 tsp Cumin seeds
1/2 medium sized Onion
1/4 tsp Ginger Garlic paste
Pinch of Asafoetida powder

Ingredients for Garnishing:
1/2 cup soaked Green Peas / frozen Green Peas / Batani
1/2 medium sized Tomato
1/2 medium sized Onion
4-5 strands of Coriander leaves
1/2 Carrot
Pinch of Chilly powder
Pinch of Salt
1/4 cup of Sev / Bombay Mixture
2-3 drops of Lemon Juice
Dates Tamarind Sweet Chutney (Optional)
Coriander Mint Leaves Chutney (Optional)

Other Ingredients:
20 Chat Puris

Gravy Recipe:
Cook soaked green grams and soaked green peas together in a pressure cooker by adding salt and sufficient amount of water.(3 whistles)
Put mustard seeds, cumin seeds, 1 tsp oil in a pan. Once it starts spluttering, add ginger garlic paste and fry them for about 1 min. Add chopped onion, asafoetida powder and fry them for about 2 mins. Grind cooked green grams, green peas, fried onion masala, coriander leaves,cinnamon, 1/2 bay leaf, cloves, peppers, green chillies, tamarind, mint leaves into smooth paste by adding sufficient amount of water.

Pour this ground masala in a vessel. Add sufficient amount of water, salt, coriander powder, rice flour, corn flour, wheat flour and bring it to boil. The consistency of the gravy should be like that of thin milkshake. Put 1/2 bay leaf to gravy. Keep the gravy in low flame for about 1 hr and keep stirring the gravy once in 5 mins. Take off the bay leaf from the gravy.

Masala Puri Recipe:
Cook green peas by adding little amount of water and salt.

Chop onion, tomato, coriander leaves into small pieces as shown in the picture below. Grate the carrot as shown in the picture below.

Take 6-7 Chat puris and mash them little bit as shown in the picture below.

Garnish little amount of cooked green peas as shown in the picture below.

Sprinkle little amount salt and chilly powder.(Add hot green chutney or sweet tamarind chutney if required)
Take around 1 cup of prepared gravy and pour it over the mashed puris as shown in the picture below.

Garnish with chopped tomato, onion, coriander leaves, grated carrot. Sprinkle little amount of bombay mixture / Sev as shown in the picture below. Garnish 2-3 drops of lemon juice and serve immediately.

Pani Puri

Ingredients for Pani:
1 tsp roasted Cumin seed powder
1/2 tsp Coriander seed powder
1/4 tsp Pepper powder
Grape sized Tamarind
Small Grape sized Jaggary
Small piece of Ginger
10-15 Ajwain seeds / Oma
1 tsp Chat Masala / Chunky Chat
7-8 strands of Coriander leaves
1 Green Chilly
6-7 Mint leaves
Salt to taste

Ingredients for Garnishing:
1/4 Onion
4-5 strands of Coriander leaves
1/4 carrot
1/4 cup Masala Puri Gravy
1/4 cup soaked Green Peas / frozen Green Peas

Other Ingredients:
18 - 20 Chat Puris
1/4 cup Masala Puri Gravy

Recipe:

Grind all the pani ingredients except chat masala into smooth paste by adding little amount of water. Add sufficient amount of water and filter(around 1.5 cups of water). Add chat masala, salt, little amount of chopped coriander leaves and mix well. (Instead MDH Pani puri powder can be used to make pani.)

Cook green peas by adding little amount of water and salt. Chop onion, coriander leaves into small pieces. Grate the carrot.
Take 6 puffed Chat puris and poke a small hole in the center of each puri. Add 4-5 cooked green peas to each puri. Garnish each puri with little amount of chopped coriander leaves, onion and grated carrot as shown in the picture below.

Take little amount of gravy (Prepare the gravy as mentioned in Masala Puri recipe) and pour it to each puri. Dip it with pani and serve immediately.

Gol Gappa

Ingredients:
18 - 20 Chat Puris
1.5 - 2 cups Pani
1 medium sized Potato / Aloo
10 - 12 Soaked Channa / Kabul Kadle / Chickpeas
Pinch of Pepper powder
1/2 - 3/4 tsp Chat Masala powder
1/4 tsp Cumin seed powder
1/4 tsp Amchoor powder / Mango powder
2 strands of Coriander leaves
Salt to taste

Recipe:
Prepare the pani as mentioned in Pani Puri recipe.

Cook the potato in a pressure cooker. (2-3 whistle) Once the pressure goes off, remove the outer cover of potatoes, mash it properly and keep it aside. Cook chickpeas, mash them little and keep them aside.

Add cumin seed powder, pepper powder, chat masala, mango powder, chopped coriander leaves, salt and mix well.

Take 6 puffed Chat puris and poke a small hole in the center of each puri. Fill each puri with the prepared masala as shown in the picture below. Dip each puri in pani and serve immediately.

Samosa Chat

Ingredients for Garnishing:
1/2 cup soaked Green Peas / frozen Green Peas / Batani
1/2 medium sized Tomato
1/2 medium sized Onion
4-5 strands of Coriander leaves
1/2 Carrot
Pinch of Chilly powder
Pinch of Salt
1/4 cup of Sev / Bombay Mixture
2-3 drops of Lemon Juice
Dates Tamarind Sweet Chutney (Optional)
Coriander Mint Leaves Chutney (Optional)

Other Ingredients:
4 - 5 cups Masala Puri Gravy

Gravy Recipe:
Prepare the gravy as mentioned in Masala Puri recipe.


Samosa Chat Recipe:
Cook green peas by adding little amount of water and salt.

Chop onion, tomato, coriander leaves into small pieces as shown in the picture below. Grate the carrot as shown in the picture below.

Take one Aloo Samosa and mash it as shown in the picture below.

Garnish little amount of cooked green peas as shown in the picture below. Sprinkle little amount salt and chilly powder as shown in the picture below.(Add hot green chutney or sweet tamarind chutney if required)

Take around 1 cup of prepared gravy and pour it over the mashed samosa as shown in the picture below.

Garnish with chopped tomato, onion, coriander leaves, grated carrot. Sprinkle little amount of bombay mixture / Sev as shown in the picture below. Garnish 2-3 drops of lemon juice and serve immediately. 

Chat Puri

Ingredients:
12 tsp Bombay Rava / Bansi Rava / Semolina
1 tsp All Purpose flour / Maida
1.5 tsp Wheat flour / Godhi hudi
3/4 tsp Rice flour / Akki Hudi
Salt to taste
Pinch of Cooking Soda
Oil

Recipe:
Put semolina, rice flour, wheat flour, all purpose flour, salt, cooking soda in a bowl and mix well. Add sufficient amount of water and mix well. The dough should be little harder than chapathi dough. Knead the dough for about 5-10 mins.(Add little amount of oil while kneading the dough.) Keep it aside for about 30 mins by covering a lid.(While pressing the dough it should not form any cracks. If it cracks then it should be kneaded properly by adding little amount of oil/water) Take little amount of dough and make a round ball. Roll the ball to a thin round shape without using any dry flour. Take one small round shaped lid or bowl and press it over the rolled chapathi as shown in the picture below.
Take out the pressed puris carefully as shown in the picture below.

Keep oil in a thick bottommed vessel and heat it. Put the rolled puri at the center and press it little bit till it puffs. Fry both the sides of puri.

Let them cool for around 1-2 hrs and store them in an airtight container. 

This puris can be used for many chat items like Pani Puri, Masala Puri, Gol Gappa. 50-60 chat puris can be made from the above mentioned ingredients.
